Carthamus tinctorius - "White grenade"

Reminiscent of a thistle and has similar flowers with oval leaves.

Can be used both fresh and dried, if harvested early it can be used as a green filler.

Direct sow when the risk of frost is over.

Harvest fresh when the flower begins to open and show its color. Buds that have not opened at all have difficulty blooming after harvest.
Harvest to dry when the flowers are completely open.
